Okay so in Monday's post I mentioned my new favorite recipe. That post actually reminded me that I've been meaning to post about it because well, its just that freaking delicious!! You can find the original recipe HERE but I tweaked several things so I'm also going to give you mine :)
*my changes are in italic.
ingredients:
1 lb lean ground beef 1 lb ground turkey
1 onion , chopped I used a 1/2 of a yellow onion
2 garlic cloves , smashed I substituted this for 2tsp of garlic salt
1 (28 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt completely left this out because I used garlic salt instead
1 teaspoon dried oregano Oregano doesn't make a ton of difference so I just sprinkled until satisfied
12 ounces cottage cheese (we like 2%) Being that cottage cheese only locally comes in 16oz containers I just used the full 16oz instead. I also used fat free.
1/2 cup grated parmesan cheese or 1/2 cup asiago cheese
12 ounces lasagna noodles , uncooked My crockpot is circle so I just basically broke up the noodles because they wouldn't fit and I layered
16 ounces shredded mozzarella cheese
directions:

Brown ground beef, onion and garlic in frypan.

Add tomato sauce, tomato paste, salt and oregano.

Cook long enough to get it warm.

Spoon a layer of meat sauce onto the bottom of the slow cooker.

Add a double layer of uncooked lasagna noodles (break to fit) and top with cheeses.

Repeat with sauce, noodles and cheeses until all are used up.

Cover and cook on low for 4 to 5 hours.
I highly recommend only cooking for 4. Also on many reviews that I read it said to add 1 cup of water. I used 2 cups of water instead, it helps to not burn your noodles up. Also this isn't a recipe that you can just leave in the pot for several hours after the four hours are up promptly remove it or you're going to have black burnt edges. Generally I get about 3 layers of noodles, make sure you double layer throughout or it will be a little more on the watery side (not completely, I mean its still good being that I single layered the first time but tonight when I cooked it it was much much better).
If I still haven't sold you on this recipe, I'll lay out some facts for you: Honey normally gets two servings majority of the time with other dishes I make. TRex normally sticks to one. This time honey couldn't get enough and took it for lunch the next day. TRex actually had gone to dinner with a friend prior to coming home and when he got here, he smelt it and grabbed himself a bowl. Then a second...then informed me he wanted the rest of the leftovers for lunch. Huge hit in this household! don't worry, I gave myself a huge pat on the back being that these boys are some picky picky eaters!
Saturday night we are having a girls sleepover and we are all bringing appetizers/finger foods. I'm still undecided on what to bring...any suggestions?

(un)domestic diva?
I've never questioned it before, but after this morning I definitely am. Am I domestically challenged? Okay so I can clean and do laundry, I'm in the clear on that. This morning I decided to be a sweet girlfriend and wake up at 5:50 to make K breakfast before he went to work. It was just a simple breakfast, one that I've cooked a million times over: bacon, eggs, and biscuits. The biscuits turned out fabulous as did the bacon. Tell me why I BURNT my eggs!? I've cooked eggs a million and one times and I've never burnt them yet the one morning a decide to get up early (on my only day off might I add) to make a hearty breakfast for my sweetie, I screw it up. Fail. Majorly. Nevertheless, he just laughed it off but it still really bothers me. Maybe I'm just not use to his cooking materials. His skillet...his stove...his eggs?
As if messing the eggs up this morning isn't enough, I might as well continue to confess my failures this morning. Last night I decided to get on my cooking wild side and try a new dish. Meatloaf! (See below for recipe) Though the meatloaf turned out fantastically as did the roasted garlic and herb potatoes, I forgot to cook the macaroni. By the time I remembered that I was suppose to start the noodles it was too late, the potatoes had only seven minutes left and the meatloaf was done. How do you do that?
To my own defense, it has been a while since I lived by myself and prepared my own meals. To my own defense, I haven't cooked in quite some time and my skills are a little on the rusty and dusty side. And last but not least, to my own defense, my boyfriend is a picky eater and if he would have accepted corn over the macaroni...it wouldn't have been to late to cook it. So bam, maybe this Diva is quite the domestic...I just have to dust off the spatula and put it to use!
Recipe for Meatloaf:
(obviously I'm not a fabulous cook, so if you're looking for something super easy to make for dinner one night...this is the shit. the original recipe is on the back of the meatloaf sauce can, but I tweaked it to fit mine and K's needs)
What you need:
1lb Hamburger meat
15 Saltine Crackers
1 Can of Hunt's Meatloaf Paste
1 Egg
Preheat oven to 400.
Put hamburger meat in bowl with half a can of meatloaf paste make sure you save at least half of the can!! and one egg. Mix it up i used my hands because it was easier Then crush your 15 saltines and mix it up in the meat as well. Shape into a loaf form.
Put in oven for 45 minutes. Take out, dump the remaining sauce on top of the meatloaf and cook for 10 more minutes. Let sit for additional 10 minutes for cooling.
and wah-lah. you just made the easiest meatloaf EVER.
